Any color can be the alpha channel, as long as that color doesn’t exist in the scene itself. Typically the color used is a color not found in nature, it’s very very bright and saturated. I’m pretty sure they use a standard, and you can buy the material. For film class once, they let me borrow a big roll of it to shoot a scene.
