Question by Cat Loves Her Sabres: OK, so I’m about to make what is probably going to be the most difficult cake I’ll ever assemble–HELP!
I’m good on the basics; I’m using your standard cake mix in two round pans for a 2-tiers cake, and I know to let everything cool completely before I try to do any assembling or frosting, but beyond that things get tricky. My best friend is OBSESSED with that Charlie the Unicorn flash movie, and I’m trying to make the cake look like “Candy Mountain.” What’s the best way to get it to look a bit crooked and leaning-to-one-side-ish without having it collapse on me? Do I carve out from the bottom or do I take off from the sides and then add to the top? Any expert bakers/cake decorators who would be good enough to help me, I REALLY appreciate it!

I would try putting the two round cakes together and using a sharp or serrated knife, begin to carve out your “mountain”. Depending on how high you want it, you could use of of the scraps to make the mountain taller. Or make another layer but use a six inch pan instead.
Once the mountain is carved, do what is called crumb coating. This is where you frost the entire cake with a light coating of frosting, enough to get the “bits” to stay put. Place the cake in the fridge for an hour.
During that hour you can make your colors up, or whatever.
Pull out of the freezer and begin frosting/decorating the cake. Have fun with it!
Another suggestion if you want to make this any taller is to use a dowel rod down the center of the mountain for stability.

Best of luck on this cake. My kids are obsessed with that candy mountain thing too. Because of it my 2 year old goes around saying “Charlie, Charlie” at random times during the day.
