Whats the best program for recording your desktop as a movie?

Im not talking about screenshots, but a program that when u click record, it makes a movie (either .avi.mpeg.mov whatever). Then when the user clicks stop. he/she can then playback the movie. Ive seen alot of tutorials that are done this way.
