Im interested in getting a vintage 8mm movie camera to play around with……but, where do i buy film? How do I use the thing? There doesn’t seem to be any instructions when I look it up. And Im assuming I need some kind of projector to see the movies I make.

You can still buy film for it (see link). Then you’ll need to find a lab to process it (google search). And, then a projector to watch your movies (eBay search).
Do a google search for the brand and model of the camera and maybe you’ll find a operating manual. Or, contact your local camera store and they can surly help you get it going.
